Step-by-Step Instructions for Authentic Beef Madras
  1. In a medium bowl, combine the spice mix ingredients and set it aside.
  2. In a large pot, heat the oil and sauté the onions for 10 minutes until golden brown.
  3. Add minced garlic, grated ginger, and dried red chilies, sauté for 1-2 minutes.
  4. Increase heat and add beef chunks, sear for 5-7 minutes until browned.
  5. Sprinkle in the spice mix and toast for 30 seconds.
  6. Add pureed tomatoes, tomato paste, salt, and pepper. Cook for 5 minutes.
