  • 2 Honeycrisp Apples or Fuji or Pink Lady
  • 1 medium Butternut Squash cubed
  • 2 tablespoons Olive Oil for roasting
  • to taste Salt
  • to taste Black Pepper
  • 4 cups Mixed Salad Greens spinach or arugula optional
  • 1 cup Feta Cheese crumbled
  • 1/2 cup Dried Cranberries or chopped dates/figs
  • 1/2 cup Pecans or Walnuts or omit for nut-free
  • 1/4 small Red Onion sliced
For the Vinaigrette
  • 3 tablespoons Olive Oil for vinaigrette
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon Honey or maple syrup for vegan
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Peel butternut squash and cut it into 1-inch cubes. Toss with olive oil, salt, and pepper, then spread on a baking sheet and roast for 20 to 25 minutes until tender.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and black pepper to taste.
  3. In a large salad bowl, add mixed salad greens, sliced Honeycrisp apple, roasted squash, feta, dried cranberries, and pecans or walnuts.
  4. Drizzle the vinaigrette over the salad and toss gently until well combined. Adjust seasoning as needed.
  5. Serve immediately to enjoy the freshness and warmth of the ingredients.
