- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray.
- Combine thawed hash browns, 1 cup shredded cheddar cheese, and half of the crumbled bacon in a bowl; mix well.
- Press the mixture into the bottom and sides of each muffin cup and bake for 15 minutes until edges are golden.
- In a separate bowl, whisk together eggs, milk, salt, pepper, and chopped green onions until smooth.
- Fill each hash brown cup with egg mixture, filling them about ¾ full to allow for expansion.
- Sprinkle remaining cheddar cheese and crumbled bacon on top of each filled cup and bake for an additional 12-15 minutes.
- Remove from the oven and let cool for about 5 minutes before transferring to a serving platter.
