  • 1/2 cup Milk Use non-dairy milk for vegan
  • 1/4 cup Chopped Green Onions Could substitute with chives
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For Baking
  • 1 can Cooking Spray Generously apply to muffin tin

Method
 

Steps
  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray.
  2. Combine thawed hash browns, 1 cup shredded cheddar cheese, and half of the crumbled bacon in a bowl; mix well.
  3. Press the mixture into the bottom and sides of each muffin cup and bake for 15 minutes until edges are golden.
  4. In a separate bowl, whisk together eggs, milk, salt, pepper, and chopped green onions until smooth.
  5. Fill each hash brown cup with egg mixture, filling them about ¾ full to allow for expansion.
  6. Sprinkle remaining cheddar cheese and crumbled bacon on top of each filled cup and bake for an additional 12-15 minutes.
  7. Remove from the oven and let cool for about 5 minutes before transferring to a serving platter.
