Method
 

Preparation Steps
  1. Thaw turkey and make it reach room temperature.

  3. Remove giblets and neck; pat turkey dry.

  5. Blend remaining spice mixture with chopped bacon to form a paste.
  6. Loosen skin of turkey and season cavities.
  7. Stuff turkey with vegetables, fruits, and herbs.
  8. Massage bacon paste under the skin evenly.
  9. Drizzle olive oil and sprinkle reserved spice mix on the outside.
  10. Roast turkey breast-side up on a vegetable bed for about 13-15 minutes per pound.
  11. Let turkey rest covered for 30-45 minutes after roasting.
