- Preheat your oven to 375°F (190°C).
- Melt 2 tablespoons of unsalted butter over medium heat.
- Sauté 2 cloves of minced garlic for about 1 minute until fragrant.
- Add 4 cups of fresh spinach, cooking until wilted, about 2-3 minutes, seasoning with salt and pepper.
- Reduce heat to low, pour in 1 cup of heavy cream, add 1 tablespoon of lemon zest, 2 tablespoons of lemon juice, and ⅛ teaspoon of nutmeg. Simmer for 3-4 minutes.
- Stir in ½ cup of Parmesan cheese, cooking for an additional minute until melted. Adjust seasoning.
- Create four small wells in the mixture, cracking 4 large eggs into the wells. Season lightly.
- Sprinkle extra Parmesan atop and bake in the preheated oven for 12-15 minutes, until egg whites are set.
