  • 2 cups Sweet Potatoes Cut into 1/3-inch half-moons
  • 2 cups Broccoli Chopped into 1.5 by 3-inch florets
For Roasting
  • 2 tbsp Neutral Oil Avocado or canola oil
For the Finish
  • 1 cup BBQ Sauce Vegan or sugar-free option recommended

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Cut the extra-firm tofu into cubes, boil in salted water for 5 minutes, drain, and toss with spices and oil.
  3. Wash and peel sweet potatoes, cut into half-moons, and chop broccoli into florets. Toss both with oil, salt, and pepper.
  4. Spread seasoned sweet potatoes and broccoli on the sheet pan, nestling the tofu cubes among them.
  5. Bake for 20 minutes, stirring halfway through until sweet potatoes are tender and tofu is crispy.
  6. Drizzle BBQ sauce over baked tofu and vegetables, return to the oven for 5 more minutes to caramelize.
  7. Let cool slightly before serving, enjoy on its own or over steamed rice.
