  • 1 lb Lean Ground Beef can be swapped with ground turkey
  • 1 Medium Onion chopped
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 can Black Beans rinsed
  • 1 cup Salsa your choice
  • 4 Medium Flour Tortillas cut into quarters
  • 1 cup Tex-Mex Cheese Blend shredded
Optional Toppings
  • 1 cup Sour Cream
  • 1 Scallions chopped
  • 1 Cilantro chopped
  • 1 medium Avocado sliced

Step-by-Step Instructions
  1. In a large skillet over medium-high heat, add the lean ground beef and chopped medium onion. Cook for 8-10 minutes, breaking up the meat as it browns, until the beef is no longer pink and the onion is translucent. Drain any excess fat.
  2. Once the beef and onion are cooked, sprinkle in garlic powder, onion powder, smoked paprika, ground cumin, and chili powder. Stir the mixture well for about 1-2 minutes until the spices become fragrant.
  3. Reduce the heat to medium and gently stir in the rinsed black beans and your choice of salsa. Mix everything together thoroughly and allow this to heat through for 3-4 minutes.
  4. Fold in the quartered flour tortillas, using a spatula to combine them with the mixture. Toss gently for about 2-3 minutes.
  5. Top with Tex-Mex cheese blend and place under the broiler for about 3-5 minutes, until the cheese is bubbly and golden brown.
  6. Serve immediately, offering optional toppings like sour cream, chopped scallions, fresh cilantro, and avocado.
