Step‑by‑Step Instructions for Birria Tacos
  1. Make the Chili Paste by soaking the dried guajillo and ancho chiles in beef stock for 15–20 minutes, then blend with other ingredients until smooth.
  2. Prepare the beef by seasoning the chuck roast with salt, pepper, and garlic powder, then sear in hot olive oil.
  3. Braise the beef in the dutch oven with the chili paste and stock, simmering in the oven for about 2 ½ hours.
  4. Once cooked, shred the beef into a pulled texture and reserve the broth.
  5. Assemble tacos by dipping tortillas in consomé, frying them, and filling with beef and toppings.
