Preparation
- Rinse 1 cup of fresh blueberries under cool water. Organize the other ingredients: blueberry syrup, heavy cream, sparkling water, and ice.
- Combine blueberries and 2 tablespoons of blueberry syrup in a blender. Blend on high for about 30 seconds until smooth. Strain through a fine sieve into a bowl to get the puree.
- Gently fold in ½ cup of heavy cream into the blueberry puree with a spatula for a smooth blend.
- Fill glasses halfway with ice. Pour the blueberry-cream mixture into each glass, then top with sparkling water.
- Garnish with whole blueberries and a mint sprig. Serve immediately while bubbly and chilled.

Notes
Store leftover blueberry-cream mixture in an airtight container for up to 3 days. For the best flavor, prepare just before serving.
