Method
 

Preparation
  1. Rinse 1 cup of fresh blueberries under cool water. Organize the other ingredients: blueberry syrup, heavy cream, sparkling water, and ice.
  2. Combine blueberries and 2 tablespoons of blueberry syrup in a blender. Blend on high for about 30 seconds until smooth. Strain through a fine sieve into a bowl to get the puree.
  3. Gently fold in ½ cup of heavy cream into the blueberry puree with a spatula for a smooth blend.
  4. Fill glasses halfway with ice. Pour the blueberry-cream mixture into each glass, then top with sparkling water.
  5. Garnish with whole blueberries and a mint sprig. Serve immediately while bubbly and chilled.
