Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Set aside half of the marinade for later use.
  2. Place the salmon filets in a shallow dish and coat them evenly with the remaining marinade. Cover and refrigerate for 30 minutes to 1 hour.
  3. Preheat your oven to 375°F (190°C). In an oven-safe skillet, heat olive oil over medium-high heat. Add the marinated salmon filets skin side up and sear for 2-3 minutes. Flip the filets over and add sliced peaches, cooking for an additional 2-3 minutes.
  4. Pour the reserved marinade over the salmon and peach slices in the skillet. Transfer to the preheated oven and bake for 12-15 minutes, until salmon reaches 145°F.
  5. Remove from oven and let it rest for a minute. Serve immediately, garnished with parsley.
