- Preheat your oven to 325°F (165°C).
- Generously season the beef short ribs with salt and black pepper. Heat olive oil in your pot over medium-high heat and sear the ribs for 8-10 minutes.
- Sauté chopped onion, carrots, and celery in the same pot for 5-7 minutes, then add minced garlic and tomato paste for 2 more minutes.
- Deglaze with a splash of red wine, scraping up any browned bits, and simmer for about 5 minutes.
- Add beef broth, thyme, rosemary, bay leaves, Worcestershire sauce, and balsamic vinegar, then bring to a gentle simmer.
- Nestle the seared ribs back into the pot and cover. Transfer to the oven and braise for 2.5 to 3 hours.
- Remove the pot from the oven, skim off excess fat, and serve garnished with fresh parsley.
