  • 4 cloves Garlic minced
For the Sauce
  • 2 tablespoons Tomato Paste
  • 2 cups Red Wine preferably dry Cabernet Sauvignon
  • 3 cups Beef Broth
  • 2 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary
  • 2 leaves Bay Leaves
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Balsamic Vinegar
For Garnish
  • 2 tablespoons Fresh Parsley chopped

Method
 

Cooking Instructions
  1. Preheat your oven to 325°F (165°C).
  2. Generously season the beef short ribs with salt and black pepper. Heat olive oil in your pot over medium-high heat and sear the ribs for 8-10 minutes.
  3. Sauté chopped onion, carrots, and celery in the same pot for 5-7 minutes, then add minced garlic and tomato paste for 2 more minutes.
  4. Deglaze with a splash of red wine, scraping up any browned bits, and simmer for about 5 minutes.
  5. Add beef broth, thyme, rosemary, bay leaves, Worcestershire sauce, and balsamic vinegar, then bring to a gentle simmer.
  6. Nestle the seared ribs back into the pot and cover. Transfer to the oven and braise for 2.5 to 3 hours.
  7. Remove the pot from the oven, skim off excess fat, and serve garnished with fresh parsley.
