- Begin by cutting fresh mozzarella into ½-inch thick pieces. If your mozzarella is watery, gently pat it dry. Set aside.
- Roll out the pizza dough on a lightly floured surface until it forms a 9x13 inch rectangle. Transfer the shaped dough onto parchment paper.
- In a jar, combine olive oil, water, chopped parsley, minced garlic, zest and juice from one lemon, salt, and black pepper. Seal and shake vigorously.
- Create dimples in the dough to hold the brine. Drizzle the brine over the dough, then evenly distribute the mozzarella on top.
- Preheat oven to 475°F (245°C). Transfer the pizza onto the preheated stone. Bake for 8-10 minutes until the crust is golden brown.
- Remove from the oven and drizzle with fresh lemon juice. Sprinkle with grated parmesan and parsley, then serve warm.
