  • 1 cup Blackberries Any seasonal berries can work well.
  • 1 cup Burrata Cheese Can substitute with fresh mozzarella.
  • 4 cups Arugula Substitute with mixed greens or spinach.
  • 2 ounces Prosciutto Omit for a vegetarian version.
For the Dressing
  • 1 tablespoon Honey Maple syrup can be a vegan substitute.
  • 2 tablespoons Apple Cider Vinegar Red wine vinegar can be used as a substitute.
  • 1 teaspoon Dijon Mustard Whole grain mustard can be used.

Method
 

Instructions
  1. Wash and slice the peaches and avocado, then set aside. Toast the pecans in a dry skillet over medium heat for 3-4 minutes until fragrant.
  2. Mix olive oil and honey. Coat peach wedges in the mixture. Preheat grill and grill peaches for 2-3 minutes on each side.
  3. On a serving platter, spread arugula, then layer avocado, prosciutto, grilled peaches, and blackberries. Top with toasted pecans.
  4. Tear burrata into pieces and scatter across the salad.
  5. Whisk olive oil, honey, apple cider vinegar, and Dijon mustard in a bowl. Season with salt and pepper. Drizzle over salad before serving.
