Step-by-Step Instructions
  1. Cut the chicken breasts into bite-sized pieces and season with chili powder, cumin, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat, add the seasoned chicken.
  3. Sauté the chicken for about 5–7 minutes until golden brown and cooked through.
  4. Add sliced bell peppers to the skillet with the chicken and sauté for another 5 minutes.
  5. Stir in corn and diced tomatoes, cooking for an additional 3-5 minutes.
  6. Reduce heat to low, sprinkle cheddar cheese over the mixture, cover, and cook until melted.
  7. Garnish with cilantro and serve with sour cream.
