  • 1 each yellow bell pepper
  • 1 each green bell pepper
  • 1 cup corn fresh, frozen, or canned
  • 1 can diced tomatoes canned is convenient
For the Topping
  • 1 cup cheddar cheese can swap for Monterey Jack or Pepper Jack
  • 1/2 cup sour cream Greek yogurt is a healthier alternative
  • 1/4 cup fresh cilantro omit or substitute with parsley

Step-by-Step Instructions
  1. Cut the chicken breasts into bite-sized pieces. Season with chili powder, cumin, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the seasoned chicken in a single layer. Sauté for about 5-7 minutes until browned and fully cooked.
  4. Stir in the sliced bell peppers and cook for 5 minutes until they soften.
  5. Add corn and diced tomatoes. Mix well and cook for another 3-5 minutes.
  6. Reduce heat to low, sprinkle cheddar cheese on top, and cover until melted for 2-3 minutes.
  7. Garnish with cilantro if desired, then serve with sour cream or Greek yogurt on the side.
