Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Sauté chicken in olive oil in a skillet over medium-high heat for 5-7 minutes until golden brown.
  3. Cook sliced bell peppers and chopped onion in the same skillet for 4-5 minutes until tender.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Combine chicken, diced tomatoes, and fajita seasoning in the skillet, cooking for an additional 2-3 minutes.
  6. Stir in cooked rice, then transfer the mixture to a greased baking dish.
  7. Layer sour cream over the mixture, then top with shredded cheddar and mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  9. Allow to cool for 5-10 minutes before serving. Garnish with cilantro if desired.
