Step-by-Step Instructions
  1. Begin by grating your fresh zucchini using a box grater, then place the grated zucchini in a clean kitchen towel. Twist the towel to squeeze out as much moisture as possible.
  2. In a large mixing bowl, combine the squeezed zucchini with shredded mozzarella cheese, grated Parmesan cheese, a beaten egg, and garlic parsley salt. Stir until all ingredients are well incorporated.
  3. Line a baking sheet with parchment paper for easy cleanup. Pour the zucchini mixture onto the prepared baking sheet, spreading it out into an even layer about ½ inch thick.
  4. Place the baking sheet in the preheated oven and bake for approximately 15 minutes or until the edges turn lightly golden.
  5. Carefully remove the sheet from the oven and sprinkle your choice of grated cheese generously over the top.
  6. Return the baking sheet to the oven and bake for an additional 2-5 minutes, watching closely as the cheese melts and turns golden.
