  • 24 pieces Ladyfinger Cookies (Savoiardi) Sponge cake or vanilla wafers work as substitutes.
  • 1 cup Cherry Preserves or Pie Filling Substitute with fresh cherries if necessary.
  • 1 cup Fresh Cherries Choose ripe, sweet varieties for best flavor.
  • 2 tablespoons Unsweetened Cocoa Powder For dusting the top.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whip the heavy cream until soft peaks form, about 3-4 minutes. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract until fluffy and smooth.
  2. Combine the brewed espresso and amaretto in a shallow bowl to create the soaking liquid.
  3. Dip the ladyfinger cookies quickly into the coffee mixture and arrange half in a single layer at the bottom of a 9x9 inch dish.
  4. Spread half of the mascarpone layer over the soaked ladyfingers, followed by half of the cherry preserves, and then add fresh cherries.
  5. Repeat with the remaining ladyfingers, mascarpone mixture, cherry filling, and fresh cherries for the second layer.
  6. Cover the tiramisu and chill in the refrigerator for at least 6 hours or overnight.
  7. Dust the top with cocoa powder before serving. Garnish with fresh cherries or chocolate shavings.
  8. Slice into squares and serve chilled.
