Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop dried apricots, soak in hot water for 10 minutes, then drain.
  3. Mix softened butter with both sugars until creamy. Add eggs and vanilla; mix until smooth.
  4. Whisk flour, baking soda, baking powder, and salt together in a separate bowl. Gradually add to wet mixture.
  5. Fold in apricots, white chocolate chips, and almonds.
  6. Shape dough into balls and place on greased baking sheets, 2 inches apart.
  7. Bake for 13-15 minutes until edges are light brown. Rotate trays halfway through.
  8. Cool on baking sheets for 5 minutes before transferring to wire racks.
