Ingredients

For the Meatloaf Base
  • 1 pound Ground Chicken Substitution Note: Ground turkey works well for a lighter version.
  • 1 cup Breadcrumbs Substitution Note: Panko breadcrumbs can create a lighter texture.
  • 2 large Eggs
  • 1/2 cup Milk
  • 3 tablespoons Dijon Mustard Note: Yellow mustard is a suitable alternative.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
For the Filling
  • 8 slices Ham Substitution Note: Leftover baked ham or a variety of deli ham can be delicious alternatives.
  • 1 cup Swiss Cheese Substitution Note: Try mozzarella, provolone, or cheddar for unique flavor combinations.
For the Topping
  • 1/2 cup Breadcrumbs
  • 3 tablespoons Butter

Equipment

  • Loaf Pan
  • mixing bowl
  • oven

Method

Step-by-Step Instructions
  1. Begin by preheating your oven to 375°F (190°C). While the oven heats up, prepare a loaf pan by greasing it lightly or lining it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, milk, eggs, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Transfer half of the chicken mixture into the prepared loaf pan, pressing it firmly into an even layer. Add a layer of sliced ham followed by Swiss cheese on top. Spread the remaining chicken mixture over the filling.
  4. Place the meatloaf in your preheated oven and bake for 45 to 55 minutes, or until the internal temperature reaches 165°F (74°C). If the top starts browning too quickly, cover it loosely with foil.
  5. Once baked, remove the Chicken Cordon Bleu Meatloaf from the oven and let it rest for about 10 minutes. After resting, slice and serve.
