Step-by-Step Instructions
  1. In a small bowl, combine mayonnaise, chipotle adobo sauce, minced garlic, and lemon juice. Stir until smooth, adjusting for salt to taste.
  2. Slice the avocado, smoked chicken, and peppadew peppers into manageable pieces.
  3. Heat a large skillet over medium-high heat. Brush olive oil on the outer side of each slice of sourdough bread. Layer the sandwich components starting with a slice of cheese, followed by avocado, chicken, peppadew peppers, and chipotle sauce.
  4. Carefully place the sandwich in the skillet and cook for about 3-4 minutes until the bottom is golden and crispy. Flip and cook for another 3-4 minutes until golden brown.
  5. Once both sides are toasted and cheese has melted, remove from skillet. Slice in half and serve immediately.
