Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the peaches, brown sugar, granulated sugar, cornstarch, vanilla extract, cinnamon, kosher salt, nutmeg, cardamom, and lemon juice. Mix thoroughly and let sit for about 10 minutes.
  3. Pour the peach mixture into a cast iron skillet or baking dish. Cut the cinnamon rolls into quarters and scatter over the peach filling. Sprinkle pecans and dot with butter.
  4. Bake for 40–45 minutes until golden brown and the peach juices are bubbling.
  5. While baking, prepare the cream cheese frosting by beating cream cheese and butter together, then mix in powdered sugar and vanilla extract.
  6. Serve warm, drizzling cream cheese frosting on top or alongside vanilla ice cream.
