  1. In a large mixing bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of salt, and 1 tablespoon of sugar. Use a pastry cutter to cut in 1 cup of chilled, diced unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide into two discs, wrap in plastic, and chill for at least 1 hour.
  2. While the dough chills, preheat your oven to 425°F (220°C).
  3. Take the first disc of chilled dough and roll it out into a 12-inch circle, aiming for an even thickness of about 1/8 inch. Transfer the dough to your pie plate.
  4. Peel, core, and slice about 6 cups of a mix of Granny Smith and Fuji apples. In a large bowl, toss the sliced apples with ¾ cup of sugar, 2 tablespoons of flour, 1 teaspoon of ground cinnamon, and a hint of nutmeg. Let sit for about 10 minutes.
