Ingredients
  

For the Beans
  • 1 pound Dried Pinto Beans soaked overnight
  • 6 cups Water/Broth using broth adds flavor
For the Seasoning
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 2 teaspoons Cumin
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1/2 teaspoon Black Pepper freshly ground
  • 1 medium Jalapeño optional, diced
  • 1 teaspoon Salt add at the end
  • 2 tablespoons Fresh Lime Juice optional
For a Garnish
  • 1/4 cup Fresh Cilantro chopped

Method
 

Directions
  1. Rinse the dried pinto beans in a colander under cool running water and soak in cold water overnight.
  2. Drain the soaked beans in a colander to remove excess water.
  3. Combine the drained beans with water or broth in a crockpot. Add onion, garlic, cumin, smoked paprika, black pepper, and jalapeño. Stir well.
  4. Cover and set the crockpot to cook on low for 8-10 hours or high for 5-6 hours until beans are tender.
  5. Stir in salt and lime juice before serving, adjusting seasonings to taste.
  6. Ladle beans into bowls and garnish with cilantro. Enjoy!
