Preparation Steps
- In a medium mixing bowl, add rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir the mixture thoroughly for about 5 minutes until all ingredients are well incorporated and creamy.
- Gently fold in your sliced bananas into the oat mixture, taking care not to mash them.
- Using a ladle or spoon, divide the oat mixture evenly into two jars or airtight containers.
- Securely seal the jars with lids to lock in freshness, then place them in the refrigerator. Allow the mixture to chill overnight or for at least 4 hours.
- When ready to enjoy, remove the jars from the refrigerator, give each jar a good stir to redistribute the ingredients, and top with fresh whipped cream and additional shredded coconut if desired.
