  • 2 tablespoons Fish Sauce Can substitute with soy sauce.
  • 1 teaspoon Sugar Can substitute with honey.
  • Salt and Pepper To taste.
  • 1 handful Fresh Cilantro Chopped.
  • Lime Wedges For garnish

Method
 

Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat until shimmering.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and grated ginger, cooking for 1 minute.
  4. Add diced red bell pepper and cook for another 3-4 minutes.
  5. Pour in coconut milk and fish or chicken broth, stir, and bring to a simmer.
  6. Stir in lime juice, fish sauce, and sugar; simmer for 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Gently add fish fillets and cook for 5-7 minutes until opaque.
  9. Stir in chopped cilantro before removing from heat.
  10. Ladle into bowls and garnish with lime wedges.
