- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a skillet, heat olive oil over medium heat, add ground beef, and cook for 5–7 minutes until browned.
- Add chopped onion and minced garlic, cooking for an additional 3–4 minutes until onions are translucent.
- Transfer beef mixture to the baking dish, layer with sliced potatoes, seasoning with salt, pepper, Italian seasoning, and paprika.
- Sprinkle cheddar cheese over the potatoes, adding Parmesan if desired, then pour beef broth around the edges.
- Cover with aluminum foil and bake for 30 minutes to steam the potatoes.
- Remove foil and bake for an additional 15–20 minutes until the cheese is bubbly and potatoes are tender.
- Let sit for a few minutes, garnish with fresh parsley, and serve hot.
