Ingredients

For the Yogurt Base
  • 2 cups Greek Yogurt Creamy base that gives a rich texture; substitute with coconut yogurt for a vegan option.
  • 0.5 cups Sweetener (Erythrit, Xylit, or Stevia) Adds sweetness without affecting blood sugar; opt for natural sweeteners if desired.
  • 1 teaspoon Vanilla Extract Enhances the sweetness and aroma; use pure vanilla for the best flavor.
For the Cookie Dough
  • 1 cup Edible Cookie Dough Provides texture and flavor; can be made with gluten-free flour for a suitable option.
  • 0.5 cups Mini Chocolate Chips Adds a chocolatey crunch; swap for dark chocolate or carob chips if preferred.

Equipment

  • mixing bowl
  • whisk
  • spatula
  • baking sheet
  • parchment paper
  • Knife

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine 2 cups of Greek yogurt, ½ cup of sweetener, and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
  2. If using store-bought edible cookie dough, cut it into small bite-sized pieces or crumble it into the yogurt mixture. For homemade dough, prepare while the yogurt base rests.
  3. Gently fold the cookie dough pieces into the yogurt mixture using a spatula.
  4. Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet, spreading it evenly to a thickness of about 1-1.5 cm.
  5. Sprinkle additional mini chocolate chips or small chunks of cookie dough on top and press down lightly.
  6. Place the prepared tray in the freezer for at least 2-4 hours until completely firm.
  7. Once frozen, remove the tray and cut into bite-sized pieces. Serve immediately or store leftovers in an airtight container.
