For the S'mores Layer
  • 1 cup Hershey Bars Chopped or dark chocolate for richer flavor.
  • 1 cup Graham Crackers Crushed; opt for gluten-free if needed.
  • 1 cup Mini Marshmallows Larger ones can be used; adjust the number.
  • 1 cup Marshmallow Fluff Homemade fluff can be used or omit for less sweetness.

Method
 

Step-by-Step Instructions
  1. Press pumpkin puree in a fine mesh strainer for 10-15 minutes to remove excess moisture.
  2. Combine melted unsalted butter, light brown sugar, and granulated sugar in a large bowl. Stir in one large egg.
  3. Gradually add ground cinnamon, kosher salt, baking powder, and all-purpose flour, mixing gently.
  4. Fold in chopped Hershey bars, crushed graham crackers, and mini marshmallows, reserving some for topping.
  5. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan. Spread half of the dough mixture into the bottom.
  6. Dollop marshmallow fluff over the base layer and spread gently.
  7. Spread remaining dough mixture over the fluff and sprinkle reserved toppings on top.
  8. Freeze assembled bars for at least 30 minutes, then bake for 25-30 minutes until golden.
  9. Cool for 10-15 minutes before cutting into squares.
