  • 2 pounds Boneless skinless chicken breasts Makes shredding easier

  • 1 teaspoon Black pepper
  • 6 cups Low-sodium chicken stock
  • 1 cup Wild rice
  • 4 cloves Fresh minced garlic
  • 1 medium Onion Sweet yellow or white
  • 2 medium Carrots Sliced
  • 2 stalks Celery Chopped
Herbs and Spices
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 pieces Bay leaves
Creamy Finish
  • 8 ounces Cremini mushrooms Sliced
  • 1 tablespoon Unsalted butter
  • 1 cup All-purpose flour Sub cornstarch for gluten-free
  • 2 cups Milk Whole or plant-based
  • 1 cup Half and half Replace with heavy cream if preferred
  • 1 tablespoon Fresh parsley For garnish

Method
 

Steps
  1. Prepare the chicken by seasoning it with kosher salt and black pepper, placing it at the bottom of the slow cooker.
  2. Combine the chicken stock, wild rice, minced garlic, diced onion, sliced carrots, and chopped celery in the slow cooker. Add dried thyme, rosemary, and bay leaves, then stir.
  3. Cover and cook on low for 6 to 8 hours. Add cremini mushrooms about 30 minutes before the cooking time ends.
  4. Once cooked, shred the chicken into bite-sized pieces and return it to the soup.
  5. Melt unsalted butter in a saucepan, whisk in flour, then gradually add milk and half and half, cooking until thickened.
  6. Pour the thickened mixture into the slow cooker and stir to blend.
  7. Ladle into bowls and garnish with fresh parsley before serving.
