Ingredients

For the Custard
  • 3 large eggs Essential for a rich, custardy texture
  • 1 cup milk Any type including almond or oat milk for dairy-free option
  • 1 cup pumpkin puree Provides the primary fall flavor; substitute with banana or applesauce for variety
  • 2 tbsp brown sugar Adds natural sweetness and caramel notes; feel free to swap with coconut sugar or maple syrup
  • 1 tsp vanilla extract Enhances overall flavor; use vanilla bean for richer taste
  • 1 tsp ground cinnamon Infuses warmth and sweetness; nutmeg can be a nice alternative
  • 1/4 tsp ground nutmeg Adds a unique spicy kick; optional if you don't have it
  • 1/2 tsp ground ginger Introduces subtle heat; fresh ginger can boost the flavor
  • 1/4 tsp salt Balances sweetness and spices; sea salt or kosher salt works best
For the Bread
  • 8 slices thick bread (Brioche or Challah) Provides a sturdy base for soaking; gluten-free bread works too
For Cooking
  • 2 tbsp butter or oil Prevents sticking and ensures beautiful browning; coconut oil or plant-based butter is a great dairy-free choice
For Toppings (optional)
  • 1/4 cup maple syrup Classic choice for sweetness; perfect for drizzling over French toast
  • 1/2 cup whipped cream Adds a light and airy touch; homemade or store-bought both work!
  • 1/4 cup toasted pecans Gives a lovely crunch; feel free to swap for any nuts or granola
  • 2 tbsp powdered sugar For a touch of sweetness and elegance; fresh fruits can also be a delightful addition

Equipment

  • mixing bowl
  • non-stick skillet
  • spatula

Method

Step-by-Step Instructions
  1. In a large mixing bowl, crack open your eggs and whisk them together with milk, pumpkin puree, brown sugar, vanilla extract, ground cinnamon, nutmeg, ginger, and a pinch of salt. Continue whisking until the mixture is smooth and well-combined.
  2. Place a non-stick griddle or skillet over medium heat and let it warm for about 3 minutes. Lightly grease the surface with a generous pat of butter or a splash of oil.
  3. Take thick slices of your chosen bread and dip each slice into the pumpkin custard mixture for about 15-20 seconds until both sides are thoroughly coated.
  4. Carefully place each soaked slice on the heated skillet, cooking for 3-4 minutes on one side until golden brown. Flip and cook for an additional 3-4 minutes on the other side.
  5. Repeat the process for remaining bread slices, adding more butter or oil to the skillet as needed.
  6. Once all slices are cooked and beautifully golden, stack them on a plate. Serve warm with your choice of toppings.
