Step-by-Step Instructions
- In a medium saucepan, combine whole cranberries, granulated sugar, honey, white wine vinegar, and a pinch of salt. Cook over medium-low heat, stirring occasionally until the mixture comes to a gentle bubble and thickens, about 5-7 minutes. Set the cranberry sauce aside to cool.
- Preheat your oven to 500°F (260°C). Grease a pizza pan with olive oil and sprinkle with cornmeal. Stretch and shape the pizza dough into a 14”-16” circle on a floured surface.
- Lay the rolled out dough on the pizza pan. Evenly spread the cooled cranberry sauce over the dough. Scatter cubed chicken, slices of brie, and shredded mozzarella over the sauce. Add red onions if desired.
- Transfer the assembled pizza into the preheated oven. Bake for 14-16 minutes until the crust turns golden brown and the cheese is bubbling.
- Remove the pizza from the oven and let it cool slightly on the pan for about 5 minutes. Cut into slices and serve warm.
