- Dice the russet potatoes into ½-inch cubes. Place them in a large pot, cover with water, and bring to a boil. Cook for 12-15 minutes until fork-tender. Drain and set aside to steam dry.
- Return the pot to heat, add the frozen peas to the boiling water with the potatoes, and cook for an additional 3-5 minutes until peas are tender. Drain again and set in a bowl.
- In a separate saucepan, melt butter over medium heat. Add diced onion and sauté for about 5 minutes until soft and translucent.
- Pour in heavy cream and bring to a gentle simmer, stirring occasionally for about 3 minutes until slightly thickened.
- Gently fold in the drained potatoes and peas, stirring to coat. Add dried dill, salt, and pepper to taste, and heat for about 2 minutes.
