Panna Cotta Instructions
- Combine 2 cups of heavy cream, ½ cup of sugar, and 1 teaspoon of crushed cardamom pods in a saucepan. Heat gently over medium heat for 4-5 minutes.
- Stir until sugar dissolves, remove from heat, and let steep for 10 minutes.
- Sprinkle 2 teaspoons of gelatin powder over 3 tablespoons of cold water in a bowl and let sit for 5 minutes.
- Gently heat the gelatin in the microwave for 10 seconds or until melted, then whisk it into the cream mixture.
- Pour the mixture into serving glasses and refrigerate for at least 4 hours until firm.
Poached Pears Instructions
- In a separate saucepan, combine 1 cup of white wine and ½ cup of sugar. Bring to a simmer over medium heat.
- Peel, core, and add the firm pears to the simmering liquid. Cook for 15-20 minutes until pears are tender.
- Remove pears from the liquid, let cool, and slice into wedges.
- Optionally, reduce the poaching liquid to a syrupy consistency.
Serving Instructions
- Top the set panna cotta with the poached pears and drizzle some poaching liquid over the top. Garnish as desired.
