Method
 

Panna Cotta Instructions
  1. Combine 2 cups of heavy cream, ½ cup of sugar, and 1 teaspoon of crushed cardamom pods in a saucepan. Heat gently over medium heat for 4-5 minutes.
  2. Stir until sugar dissolves, remove from heat, and let steep for 10 minutes.
  3. Sprinkle 2 teaspoons of gelatin powder over 3 tablespoons of cold water in a bowl and let sit for 5 minutes.
  4. Gently heat the gelatin in the microwave for 10 seconds or until melted, then whisk it into the cream mixture.
  5. Pour the mixture into serving glasses and refrigerate for at least 4 hours until firm.
Poached Pears Instructions
  1. In a separate saucepan, combine 1 cup of white wine and ½ cup of sugar. Bring to a simmer over medium heat.
  2. Peel, core, and add the firm pears to the simmering liquid. Cook for 15-20 minutes until pears are tender.
  3. Remove pears from the liquid, let cool, and slice into wedges.
  4. Optionally, reduce the poaching liquid to a syrupy consistency.
Serving Instructions
  1. Top the set panna cotta with the poached pears and drizzle some poaching liquid over the top. Garnish as desired.
