Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Toss broccoli florets and sliced carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
  3. In a large pot, bring chicken broth to a boil. Add bowtie pasta and cook until al dente, about 10-12 minutes, reserving 1 cup of pasta water.
  4. Season chicken breasts with salt, pepper, and Italian seasoning. Cook in a skillet with olive oil over medium heat for 6-7 minutes until golden brown. Let rest.
  5. In the same skillet on low heat, sauté minced garlic for 1 minute. Add heavy cream and whisk in shredded Cheddar and Havarti until smooth.
  6. Combine pasta, roasted veggies, and sliced chicken in the skillet with sauce. Toss until well coated.
  7. Serve immediately, garnishing with parsley and additional shredded Cheddar if desired.
