Preparation Steps
  1. Melt 2 tablespoons of unsalted butter over medium heat until foamy, about 1 minute.
  2. Add 2 large sliced yellow onions and a pinch of salt. Sauté for 25-30 minutes until golden brown.
  3. Stir in 2 cloves of minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add 1 cup of Arborio rice, stirring to coat. Cook for about 2 minutes until edges are slightly translucent.
  5. Pour in 2 ½ cups of low-sodium chicken broth, bring to a boil, then reduce heat and cover. Simmer for 15-20 minutes.
  6. Remove from heat and fold in finely chopped fresh thyme and ½ cup of grated Parmesan cheese.
  7. Adjust consistency by adding more chicken broth if the rice is too thick.
  8. Serve warm, garnishing with extra thyme or crispy onions if desired.
