Step-by-Step Instructions for French Onion Chicken Rice Casserole
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add seasoned chicken breasts to the skillet, cooking for about 5-6 minutes on each side until golden brown.
  3. In the same skillet, add 2 sliced onions and cook for 10-12 minutes until golden brown.
  4. Stir in 3 minced cloves of garlic and cook for an additional 1-2 minutes until fragrant.
  5. Pour in 2 cups of chicken broth, add ¾ cup of heavy cream and 1 teaspoon of dried thyme, and bring to a gentle simmer.
  6. Stir in 1 cup of long-grain white rice and return the seared chicken breasts to the skillet.
  7. Cover the skillet and reduce heat to low, cooking for 20-25 minutes until rice absorbs liquid.
