Ingredients
  

Marinade
  • 1 pound boneless chicken thighs or breasts Choose thighs for added juiciness.
  • 1 cup Greek yogurt Can substitute with plant-based yogurt.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon curry powder
  • 1 teaspoon salt
Sauce
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves minced garlic
  • 1 medium diced onion
  • 1 cup tomato sauce
  • 1 teaspoon sugar
  • 1 cup heavy cream Can be substituted with coconut cream.
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne Optional and adjustable.
Finishing Touches
  • 1 teaspoon garam masala
  • 2 tablespoons fresh parsley or cilantro For garnish.

Method
 

Steps
  1. Marinate the chicken by combining it with Greek yogurt, salt, garlic powder, paprika, and curry powder. Let it sit for at least 15 minutes.
  2. Sear the marinated chicken in a skillet with melted butter and olive oil for about 4-5 minutes until golden brown.
  3. Sauté minced garlic and diced onion in the same skillet until the onion is translucent.
  4. Stir in tomato sauce, sugar, salt, black pepper, curry powder, and optional cayenne, simmering for 5 minutes.
  5. Reduce the heat and stir in heavy cream, simmer for another 5-7 minutes while stirring constantly.
  6. Add the seared chicken back to the skillet and sprinkle with garam masala, simmer for an additional 8-10 minutes.
  7. Remove from heat and garnish with fresh parsley or cilantro, serve with naan or basmati rice.
