  • 8 ounces Pasta spaghetti, fettuccine, or your favorite type
For the Creamy Sauce
  • 1 cup Cottage Cheese can substitute with Greek yogurt or silken tofu
  • 1 cup Fresh Basil substitutes could be spinach or arugula
  • 2 tablespoons Lemon Juice freshly squeezed preferred
  • 2 cloves Garlic adjust to taste
  • 2 tablespoons Olive Oil or any neutral oil if desired
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil, add pasta and cook until al dente, about 8-10 minutes. Reserve ½ cup pasta water, then drain.
  2. In a blender, combine cottage cheese, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, about 30-45 seconds.
  3. Add fresh basil to the blender and pulse until chopped and incorporated. Adjust consistency with reserved pasta water if needed.
  4. Pour the creamy sauce over the drained pasta and stir gently to coat. Let it sit on low heat to warm through.
  5. Plate and garnish with fresh basil and a drizzle of olive oil or cracked pepper. Serve immediately.
