Step-by-Step Instructions
  1. In a large pot over medium heat, add a drizzle of olive oil, then toss in one finely chopped onion and two minced garlic cloves. Sauté for about 3–4 minutes until the onion is translucent and fragrant.
  2. Once the onions are ready, add in one cup of orzo and two cups of vegetable or chicken broth. Bring the mixture to a boil, stirring frequently, to ensure the orzo is well-coated. Once boiling, lower the heat to a simmer and cover the pot, allowing it to cook for 8–10 minutes until the orzo is tender and has absorbed most of the liquid.
  3. After the orzo is cooked, stir in two cups of chopped broccoli and continue to simmer uncovered for about 5 more minutes.
  4. Remove the pot from heat and stir in one cup of shredded cheddar cheese along with half a cup of heavy cream.
  5. Taste the creamy one-pot broccoli cheddar orzo and adjust the seasoning with salt and pepper as desired.
