- In a large pot over medium heat, add a drizzle of olive oil, then toss in one finely chopped onion and two minced garlic cloves. Sauté for about 3–4 minutes until the onion is translucent and fragrant.
- Once the onions are ready, add in one cup of orzo and two cups of vegetable or chicken broth. Bring the mixture to a boil, stirring frequently, to ensure the orzo is well-coated. Once boiling, lower the heat to a simmer and cover the pot, allowing it to cook for 8–10 minutes until the orzo is tender and has absorbed most of the liquid.
- After the orzo is cooked, stir in two cups of chopped broccoli and continue to simmer uncovered for about 5 more minutes.
- Remove the pot from heat and stir in one cup of shredded cheddar cheese along with half a cup of heavy cream.
- Taste the creamy one-pot broccoli cheddar orzo and adjust the seasoning with salt and pepper as desired.
