Step-by-Step Instructions
  1. In a large pot over medium heat, add a drizzle of olive oil, then toss in one finely chopped onion and two minced garlic cloves. Sauté for about 3–4 minutes until the onion is translucent and fragrant.
  2. Once the onions are ready, add in one cup of orzo and two cups of vegetable or chicken broth. Bring the mixture to a boil, stirring frequently.
  3. After the orzo is cooked, stir in two cups of chopped broccoli and continue to simmer uncovered for about 5 more minutes.
