Step-by-Step Instructions
- Preheat your oven to 400°F (200°C).
- Take a whole head of garlic and slice off the top, exposing the cloves. Wrap it in aluminum foil and drizzle a bit of olive oil over the exposed cloves.
- Place the wrapped garlic in the preheated oven and roast for 30 to 35 minutes until the cloves are soft and golden brown.
- In a mixing bowl, combine softened goat cheese, cream cheese, sour cream, and the remaining olive oil. Mix until well-blended.
- Once the garlic cloves are cool enough to handle, squeeze them into the cheese mixture. Stir well to distribute the roasted garlic.
- Sprinkle in fresh thyme along with salt and pepper to taste. Stir vigorously to incorporate the herbs.
- Blend the dip using a hand mixer or food processor until it reaches your desired consistency.
- Transfer the dip into a serving dish and garnish with a drizzle of olive oil and fresh thyme if desired. Serve warm or at room temperature.
