Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Take a whole head of garlic and slice off the top, exposing the cloves. Wrap it in aluminum foil and drizzle a bit of olive oil over the exposed cloves.
  3. Place the wrapped garlic in the preheated oven and roast for 30 to 35 minutes until the cloves are soft and golden brown.
  4. In a mixing bowl, combine softened goat cheese, cream cheese, sour cream, and the remaining olive oil. Mix until well-blended.
  5. Once the garlic cloves are cool enough to handle, squeeze them into the cheese mixture. Stir well to distribute the roasted garlic.
  6. Sprinkle in fresh thyme along with salt and pepper to taste. Stir vigorously to incorporate the herbs.
  7. Blend the dip using a hand mixer or food processor until it reaches your desired consistency.
  8. Transfer the dip into a serving dish and garnish with a drizzle of olive oil and fresh thyme if desired. Serve warm or at room temperature.
