Ingredients
  

For the Pasta
  • 8 ounces Spaghetti or Fettuccine Whole wheat or gluten-free alternatives work too.
For the Sauce
  • 2 tablespoons Olive Oil Can substitute with butter.
  • 1 cup Heavy Cream Can consider half-and-half or non-dairy cream.
  • 1/2 cup Grated Parmesan Cheese Pecorino Romano is a tasty alternative.
  • 2 cloves Garlic Minced; use garlic powder if fresh isn’t handy.
  • 1 tablespoon Lemon Zest Also use lemon juice for flavor.
For the Protein
  • 1 pound Salmon Fillet Can swap for chicken or shrimp.
For the Greens
  • 4 cups Fresh Spinach Kale or arugula can also be used.
For Seasoning
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Fresh Parsley Chopped; for garnish.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add spaghetti or fettuccine and cook for 8–10 minutes until al dente. Drain and set aside.
  2. While the pasta cooks, season the salmon fillet with salt and pepper. Pat dry to ensure a nice sear.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the salmon for 4–5 minutes on each side until golden brown. Remove and keep warm.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be cautious not to burn it.
  5. Add fresh spinach to the skillet and cook for 2–3 minutes until wilted.
  6. Pour in the heavy cream, whisk in grated Parmesan cheese, lemon zest, and juice until smooth. Simmer gently for a minute.
  7. Flake the salmon and add it back to the skillet, along with the cooked pasta. Toss gently to coat.
  8. Taste and adjust seasoning with salt, pepper, or lemon juice. Serve into bowls with a generous helping of the creamy sauce.
  9. Garnish with freshly chopped parsley before serving. Enjoy!
