Step-by-Step Instructions for Sausage Potato Soup
- In a large pot, heat the pan over medium heat and add the ground Italian sausage. Cook for about 10-12 minutes, crumbling the meat as it browns.
- Carefully drain any excess fat from the pot. Add 2 tablespoons of butter and melt. Add the diced yellow onion, carrots, and celery, sautéing for around 5 minutes until softened.
- Stir in the minced garlic and cook for 1 minute. Sprinkle in the all-purpose flour, stirring continuously for about 2 minutes to create a roux.
- Gradually pour in the chicken broth, whisking constantly. Bring to a gentle boil, scraping the bottom of the pot to incorporate browned bits.
- Add the cubed red potatoes to the pot. Reduce heat to low and let simmer uncovered for 20-25 minutes, or until potatoes are tender.
- Stir in the heavy cream, soy sauce, and hot sauce. Mix well and add shredded cheddar cheese if desired. Heat through for about 5 minutes without boiling.
