  • 4 cups whole milk Choose high-quality milk for creaminess.
  • 3/4 cup grated panela Or substitute with brown sugar.
  • 1/2 cup cornstarch Dissolve in cold milk first.
  • 1 teaspoon ground Ceylon cinnamon Use regular cinnamon if unavailable.
  • 2 tablespoons butter
Optional Topping
  • 1/4 cup grated coconut Can be omitted.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan over medium heat, combine milk, panela, and cinnamon. Stir gently for about 5 minutes until panela dissolves.
  2. In a small bowl, whisk together cornstarch and cold milk until smooth to avoid lumps. Set aside.
  3. Pour the cornstarch mixture into the warm milk while stirring with a whisk, stirring for 2-3 minutes until thickened.
  4. Lower the heat and stir constantly for about 10-15 minutes until the custard coats the back of a spoon.
  5. Remove from heat and stir in butter until melted and incorporated.
  6. Pour the custard into a greased dish or bowls, let cool for 30 minutes, then chill in the refrigerator for at least 2 hours.
  7. Before serving, garnish with grated coconut and cinnamon. Slice into squares or serve in bowls.
