Step‑by‑Step Instructions
  1. In a mixing bowl, combine 1 pound of ricotta, 2 teaspoons of fresh thyme, ½ teaspoon of kosher salt, and a pinch of crushed red pepper flakes. Mix until smooth for 2-3 minutes.
  2. Drizzle in 1 tablespoon of extra-virgin olive oil and mix until silky for about 1 minute.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and 1½ cups of corn. Sauté for 5-7 minutes until charred.
  4. Remove corn from heat and cool slightly. Fold into the ricotta mixture.
  5. Transfer the dip to a serving bowl. Drizzle with hot honey and sprinkle flaky sea salt on top.
  6. Serve with a variety of crostini or crackers.
