- In a mixing bowl, whisk together ¼ cup of avocado oil, 2 tablespoons of rice vinegar, the juice from one clementine, and 2 tablespoons of freshly chopped parsley until the mixture is well blended.
- Using a spiralizer, spiralize 1 medium daikon and 1 Granny Smith apple into thin strips.
- In a large mixing bowl, combine the spiralized daikon and apple, then pour the dressing over the top. Gently toss everything together.
- Just before serving, sprinkle ¼ cup of unsalted pepitas over the salad and give it another gentle toss.
- Transfer the daikon salad with green apple and pepitas to a serving platter or individual bowls and enjoy!
