  • 1 medium Granny Smith apple can substitute with Fuji or Honeycrisp
  • ¼ cup fresh parsley can substitute with cilantro
  • ¼ cup pepitas (unsalted) can substitute with sunflower seeds
For the Dressing
  • ¼ cup avocado oil can substitute with olive oil
  • 2 tablespoons rice vinegar can substitute with apple cider vinegar
  • 1 medium clementine juice can substitute with orange juice
  • 2 tablespoons lime juice can substitute with lemon juice

Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, whisk together ¼ cup of avocado oil, 2 tablespoons of rice vinegar, the juice from one clementine, and 2 tablespoons of freshly chopped parsley until the mixture is well blended.
  2. Using a spiralizer, spiralize 1 medium daikon and 1 Granny Smith apple into thin strips.
  3. In a large mixing bowl, combine the spiralized daikon and apple, then pour the dressing over the top. Gently toss everything together.
  4. Just before serving, sprinkle ¼ cup of unsalted pepitas over the salad and give it another gentle toss.
  5. Transfer the daikon salad with green apple and pepitas to a serving platter or individual bowls and enjoy!
