- In a medium bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Whisk until smooth and creamy. Set aside.
- In a large mixing bowl, whisk together buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, and pepper. Add chicken and let marinate for 10 minutes.
- Remove each piece of chicken from the marinade and coat in panko breadcrumbs, pressing to adhere. Lay on a plate.
