Preparation
- Prepare your coating station with three bowls: one for the coating mixture, one for flour, and one for the egg and water.
- In the first bowl, mix together panko breadcrumbs, garlic powder, paprika, grated Parmesan, kosher salt, and freshly ground black pepper.
- In the second bowl, add all-purpose flour.
- In the third bowl, whisk together the egg and a splash of water.
- Lightly season the chicken pieces with salt and pepper, coat with flour, then dip in the egg mixture, and finally coat with the seasoned panko.
- Heat vegetable oil in a frying pan over medium-high heat until shimmering.
- Fry the chicken bites in small batches for 3-4 minutes per side until golden brown.
- Transfer fried bites to a plate lined with paper towels to drain excess oil.
- Serve with warm marinara sauce and garnish with chopped basil.
