Ingredients
  

Dumpling Filling
  • 1 package Dumpling wrappers Gyoza wrappers recommended
  • 1 pound Ground chicken Chicken thighs preferred for juiciness
  • 2 tablespoons Light soy sauce Use regular soy sauce if preferred
  • 1 tablespoon Shaoxing wine Substitute with dry sherry if needed
  • 1 teaspoon Grated ginger
  • 2 stalks Green onions Mince finely
  • 1 medium Grated carrot
  • 1 cup Canned corn Frozen corn can be used
  • 1 teaspoon Salt
  • 2 tablespoons Cornstarch
  • 1 teaspoon White pepper Adjust according to taste
  • 1 tablespoon Sesame oil Add at the end to maintain moisture
  • 2 tablespoons Peanut or vegetable oil For pan-frying
Optional Dipping Sauce
  • 1 tablespoon Chinkiang vinegar
  • 2 tablespoons Homemade chili oil

Method
 

Filling Preparation
  1. In a large mixing bowl, combine the ground chicken, light soy sauce, and Shaoxing wine. Mix until sticky and marinate for at least 15 minutes.
  2. Add grated ginger, minced green onions, grated carrot, canned corn, salt, cornstarch, and sesame oil to the marinated chicken. Mix well.
Dumpling Assembly
  1. Lay out dumpling wrappers and wet edges with water. Place 1 tablespoon of filling in the center and seal tightly.
  2. Cover assembled dumplings with a damp paper towel.
Cooking
  1. In a large skillet, heat oil over medium-high heat. Add dumplings and fry until golden brown.
  2. Pour in water, cover, and steam until cooked through.
Serving
  1. Remove lid and crisp up for additional minute before serving.
